What is wrong w/ single deck blackjack & why many peoples stay away from this game? Is it not that the lesser no. of decks used the better chances at winning?

yes, the lesser number of decks, the easier it is to count, strategize and win. however it's not as challenging as playing between 1-8 decks which is how casinos usually do it.

Nothing wrong with it, in fact the odds for the player should be better with fewer decks. What I hear is you want to avoid these games if the casino changed the payout/rules for single-deck blackjack to favor the house. It's business after all and casinos won't want a game that would give them too much losses.

single card deck is easy for practice but then again, casinos go for at least 2 - 8 just like Lucky8 said. ideally you use one deck to practice counting but if you want to develop your own system, practice with more decks.

I agree. But you want to hone your skill so I suggest you move up to more cards. The more cards you play with the more perfect your strategy will be and the more likely you will win.
