Changing lines

I am new to sports betting and I am wondering Why sportsbooks change their lines?

Yeah well bookies and bookmakers also need to make money, hence line moves. How'd you expect them to pay up if all people decide to bet on one player/team only??

In the end its all about profit. Otherwise why go into the bookie business anyway? I guess when this happens all bets are off, otherwise how does a bookie cover all the bets?
