How many dice rolls is average in a regular game get in an hour on land casinos? I want to know so I have an idea if I'm going too fast or too slow in online craps. My hunch is that online craps should have more rolls per hour compared to people manually throwing the dice and the casino personal collecting bets or handing out chips on a win.

I'd guess anywhere between 50 to 80 rolls on a table that is not full packed and about 6 to 8 people playing.
Online craps should be faster. On a single player game you can roll as fast as you want without regard of other players or the time it takes to collect the bet and reward you chips. The computer does that in a split second.
I would suggest you pace yourself. Going all out like there is no tomorrow is no good.

Assuming regular craps game for you is between 5 to 9 people at the table, the average rolls are between 100 to 150.
The rolls per hour goes down as more people play and this is inversely proportional the fewer the players.

According to 'the Wizard' a one player crap table averages out 200+ rolls in an hour. Are you going to try and match that?
I advise not to.
You should play at your own pace. One that you are comfortable with. There is no too slow or too fast as long as you feel it is the right playing style for you. Since it is online, and I assume single player, you are under no obligation to hurry up in courtesy to other players. Take your time and play it to your advantage.

I agree with most of has already been said - Play at your own pace.
Trying to match the average rolls land casinos get per hour is stupid. The only reason why it is that fast is not because the players at the table want to play fast or they're racing against time, nor is it the best strategy to play fast. The fast-paced games are intentionally done by the casino.
When there is nobody playing at the table that means the casino is not earning.
0 rolls = 0 income
A very slow number of rolls per hour means the casino is not earning to its maximum potential.
slow ave. rolls / hr = slow income / hr
